NO BAKE SANTA HATS

It’s that time of year again - Santa Claus is coming to town. Why not create something easy and delightful for a Christmas treat and make these miniature No-Bake Santa Cheesecakes that look like the big fellas hat! They are no-bake, so no fuss, half fruit (so at least somewhat healthy) and the kids will love helping create these fun bite size snacks.

 

INGREDIENTS

1 cup Arnotts Chocolate Ripple biscuits

3 tablespoon coconut oil

8 ounce cream cheese, low fat

1/2 container (4 oz) Greek Yogurt

1 1/2 tablespoon honey

1/2 tablespoon lemon juice

1 tsp vanilla extract

1 dash salt

24 medium sized strawberries

 

METHOD

Finely crush Arnott’s Chocolate Ripple biscuits in a blender or food processor and combine with melted coconut oil. 

Grease a mini cupcake pan and place a heaped teaspoon of crust into each well and flatten.

Place in the freezer to let firm while you make the filling.

Combine softened cream cheese with Greek yogurt, honey, lemon juice, vanilla and salt. 

Mix until smooth and then spoon about 1 tablespoon of filling into each well of your mini cupcake pan and smooth out to a flat surface

You can keep some extra cheesecake filling to make the hats pompom, or mini marshmallows, cut in half, are a great alternative.

Place in the freezer to firm up for at least 15 minutes.
